Peanut Butter Fudge Day

  • Completion Time: 1 Hour

We recently celebrated Peanut Butter Fudge Day and Peanut Butter Lover’s month by making this insanely delicious fudge recipe.

Peanut butter is great on bread or toast so, naturally, it would be amazing in a dessert. This one is incredibly easy to make, so even a confectionery novice can tackle this delicious treat.  Added bonus: it’s all plant-based, which means it’s dairy-free and egg-free, for those with allergies or following a vegan diet.

When you’re done baking, simply store them in a Consol jar for sneaky snacking. You can also gift these beauties to friends and family this festive season. Add some twine, with a little tag attached, and you’re winning the hearts (and stomachs) of your nearest and dearest.

Materials Needed

Amount Material
1 Cup Vegan margarine (you can get this at most supermarkets)
Cups powdered sugar (also called Confectioner's Sugar or Icing Sugar)
1 Cup Cocoa
1 Cup Peanut butter (at room temperature is best)
1 tsp Vanilla essence

  1. Lightly grease a loaf pan or a shallow baking dish, about 20x20 cm square.
  2. Over medium-low heat, melt the vegan margarine in a medium-sized saucepan and stir in the icing sugar, stirring to combine well. It will take a couple minutes to get all of the sugar mixed in.
  3. Keeping the saucepan over low heat, add the cocoa and stir to combine well.
  4. Add the peanut butter and vanilla, and combine well.
  5. Spread the mixture into a shallow baking dish and refrigerate until firm – at least 1 hour.
  6. Use a knife to cut them into cubes and enjoy!
