Stout & the Stew

Perfectly Made for Each Other 

There’s nothing like a good stew if you’re looking for comfort food. And there’s nothing like a good milk stout to make your stew outstanding. Milk stout is ideal as it pairs well with the beef flavours; stouts are also stronger and much darker when compared to ales. Give this simple recipe a bash and have an extra milk stout at hand to sip while you cook.

Ingredients Needed

Amount Ingredient
500 g Cake flour
10 g Yeast
1 tsp Sugar
1 tsp Salt
400 ml Warm water (you could use less, depending on texture)
80 g Finely chopped thyme & parsley


  1. Mix all the dry ingredients together in a glass bowl, then slowly add water while mixing to form a soft dough.
  2. Knead dough until its elastic, then cover glass bowl. Allow to rise for 30 min - 1 hour.

Ingredients Needed

Amount Ingredient
1,2 kg Stewing beef
340 ml Milk stout
1 Onion,Chopped finely
2 Beef stock, cubes
500 ml Water
400 g Chopped tomatoes
50 g Tomato paste
1 tbsp Brown sugar
1 Bouquet garni (bundle of parsley, rosemary & thyme)
5 Carrots, cut chunky
2 Potatoes, cut chunky
1 tbsp Crushed garlic
- Salt & pepper


  1. Prepare all the ingredients and add them to individual glass stacking bowls.
  2. Heat oil in a pot, season meat with salt & pepper, then brown meat on all sides.
  3. Remove beef and set aside in a glass bowl.
  4. Add onion, garlic and cook until golden.
  5. Deglaze the pot with milk stout, and allow it to reduce by half.
  6. Once reduced, add stock cubes, water, tomatoes, brown sugar, tomato paste, bouquet garni, carrots and potatoes.
  7. Mix well, then add beef back into the pot, and allow it to cook on a medium heat for 1 hr or until meat is tender.
  8. When meat is tender, roll dough into small round balls and add on top of the stew.
  9. Cover the stew with a lid and cook for a further 20 minutes.
