Chewy Choc Chip Cookies

  • Difficulty: Medium
  • Completion Time: 45 minutes

There are few treats sweeter – or simpler – than a glass of cold milk and a soft, chewy chocolate chip cookie. Keep them in our Consol Cookie Jars for a gorgeous gift or a great way to display your baked goods. The jars keep them fresh, soft and tasty for days, if you can stop yourself from eating them all at once.

Ingredients Needed

Amount Ingredient
8 tbsp salted butter
½ cup sugar
¼ cup treacle sugar
1 tsp vanilla extract
1 egg room temperature
1 ½ cups flour
½ tsp baking soda
¼ tsp salt
½ cup chocolate chips
½ cup chocolate chunks
One 2ltr Cookie Jar

This recipe makes about 12 cookies.

  1. Preheat the oven to 180C.
  2. Microwave the butter for 40 seconds, and then add both types of sugar. Use an electric mixer to beat until creamy.
  3. Add the vanilla extract and the egg and beat on low speed for about 15 seconds until just combined.
  4. Add the flour, baking soda and salt. Mix until you can see crumbles.
  5. Use your hands to create one big ball with the mixtures. Add the chocolate and use your hands to mix them in. You can use milk, white or dark chocolate – or all three for an extra indulgent treat!
  6. Separate the dough into 12 balls and space them out evenly on a cookie sheet.
  7. Bake for 9-11 minutes.
  8. Remove from the oven and let cool on the cookie sheet for half an hour.
  9. After sampling a few, put your cookies on display in your 2ltr jar.
