Festive Gin Fizz

However you celebrate the holidays, this pomegranate and rosemary gin fizz will get you in the festive spirit. The summer cocktail is delicious and refreshing, and perfect for sipping on whether you’re on holiday or enjoying a staycation. Finish it off with Barker & Quin tonic — packaged in Consol bottles, it’s the glassiest mixer around!   

Ingredients Needed

Amount Ingredient
½ cup Water
½ cup Sugar
1 handful Fresh rosemary sprigs, rinsed
½ cup Pomegranate juice
1 cup Gin
½ tsp Lemon juice
1 bottle Barker & Quin Finest Indian Tonic Water
- Fresh pomegranate and rosemary sprigs to serve
- Ice
4 Consol Private Label gin glasses

For a non-alcoholic option, use more tonic water or lemonade instead of gin. 

Directions:

  1. Start by making a simple rosemary sugar syrup. Bring the sugar and water to a simmer in a small saucepan.
  2. Remove from the heat, and add the rosemary. Leave to cool and steep for half an hour.
  3. When the syrup is ready, divide the ice among your Consol gin glasses.
  4. In a jug, mix the gin, pomegranate juice, sugar syrup and lemon juice. Pour into your glasses.
  5. Top with tonic water to taste and garnish before serving.
