Layered Lunches
Ingredients Needed

2 | Small Cucumbers, diced |
1 | Cup shredded red cabbage |
1 | Cup cooked edamame |
8 | Yellow mini bell peppers, stemmed and sliced into rings |
1 | Cup coarsely chopped cooked artichoke hearts |
1 1/3 | Cup chopped tomatoes |
1 | Medium avocado, diced |
3 | Tbsp. fresh citrus juice |
2 | Tbsp. extra virgin olive oil |
1 | Tsp. Dijon mustard |
Instructions
- Layer the ingredients from hardest to the most delicate. Begin with a layer of cucumber, then red cabbage, edamame, yellowpeppers, artichoke hearts, tomatoes and finish off with a layerof avocado
- Sprinkle with citrus juice, olive oil and Dijon mustard
- Season to taste
- Enjoy with friends or for a quick healthy meal on the go
