Layered Lunches

Ingredients Needed

Amount Ingredient
1 1L Consol preserve jar
2 Small Cucumbers, diced
1 Cup shredded red cabbage
1 Cup cooked edamame
8 Yellow mini bell peppers, stemmed and sliced into rings
1 Cup coarsely chopped cooked artichoke hearts
1 1/3 Cup chopped tomatoes
1 Medium avocado, diced
3 Tbsp. fresh citrus juice
2 Tbsp. extra virgin olive oil
1 Tsp. Dijon mustard


  1. Layer the ingredients from hardest to the most delicate. Begin with a layer of cucumber, then red cabbage, edamame, yellowpeppers, artichoke hearts, tomatoes and finish off with a layerof avocado
  2. Sprinkle with citrus juice, olive oil and Dijon mustard
  3. Season to taste
  4. Enjoy with friends or for a quick healthy meal on the go
